Ingredients:

• 6 cups sweet potato cubes
• 2 tbsp extra virgin olive oil (plus extra for drizzling)
• 2 ½ tsp crystal kosher salt (more to taste)
• 14 oz canned chickpeas, drained and rinsed
• ¾ cup tahini
• ¼ cup freshly squeezed lemon juice
• 3 garlic cloves
• ¼ to ½ tsp freshly ground nutmeg
• ¼ tsp cinnamon
• ¼ tsp cumin
• 5 tbsp water
• 4 to 6 ice cubes
• ½ tsp paprika
• Sliced almonds for garnish
• Parsley for garnish (optional)

Instructions:

1. Preheat the oven to 400°F. Toss sweet potato cubes with olive oil and 2 tsp salt. Roast for 25-30 minutes until tender.
2. In a blender or food processor, combine the roasted sweet potatoes, chickpeas, tahini, lemon juice, garlic, nutmeg, cinnamon, cumin, and water. Blend until smooth.
3. Add the ice cubes one at a time and blend until the hummus is super smooth and fluffy.
4. Transfer to a serving bowl, drizzle with olive oil, sprinkle with paprika, and top with sliced almonds. Add parsley for extra color, if desired.
5. Serve with warm pita or crackers and enjoy the perfect autumn snack!
