Honey Balsamic Carrots

Sweet, tangy, and perfectly roasted, this is the autumn side dish you didn’t know you needed. Packed with flavor and finished with a balsamic honey drizzle, this easy recipe will impress the dinner party.

Ingredients:

  • Carrots (cut on the bias into 1½ inch pieces)
  • 2 garlic cloves
  • 1 tbsp balsamic vinegar (plus 1 tbsp for serving)
  • 1 tbsp honey (plus 1 tbsp for serving)
  • 1 tbsp avocado oil (or olive oil)
  • Salt, black pepper, dried thyme
  • Optional: crumbled goat cheese

Instructions:

  1. Preheat oven to 425°F and line a baking pan with parchment paper.
  2. Prep carrots: rinse, dry, peel (if desired), and slice into thirds.
  3. Toss carrots in a mix of oil, balsamic vinegar, honey, garlic, salt, pepper, and thyme.
  4. Roast in a single layer for 20-25 minutes until tender.
  5. Baste with the remaining balsamic mixture in the last 5-10 minutes.
  6. Serve with an extra drizzle of balsamic honey sauce and optional crumbled goat cheese.
