Windansea Coconut Ceviche

We teamed up with Harrison Goldfarb, founder of @windansea.coconuts, to bring you a tropical ceviche experience like no other: served inside one of his signature coconuts!

Inspired by the beauty of San Diego’s Windansea Beach, he’s made it his mission to share that same sense of peace and happiness with others through his unique coconuts. Each one is a little piece of paradise, helping guests feel present and connected no matter where they are.

Harrison brought his passion for creating joy through food to the table with this fresh ceviche recipe!

Ingredients:

  • 1 lb fresh white fish (snapper, tilapia, or sea bass), diced
  • 1 cup fresh lime juice (8-10 limes)
  • 1 small red onion, thinly sliced
  • 1 jalapeño, finely diced (optional)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • Sea salt & black pepper to taste
  • 1/4 cup toasted coconut flakes

Instructions:

  1. Dice the fish and marinate in lime juice for 30-45 minutes until opaque.
  2. Mix in red onion, jalapeño, tomatoes, cucumber, and cilantro.
  3. Season with salt and pepper, and gently fold in avocado.
  4. Top with toasted coconut flakes.
  5. Serve chilled with tortilla chips in a small bowl or a coconut!
