Ingredients:
- Corn tortillas
- Rotisserie chicken
- Roasted corn
- Cilantro
- Green chiles
- Crumbled Cotija cheese
- Shredded Monterey Jack cheese
- Plain Greek yogurt
- Lime
- Mayo
- Hot sauce
- Cumin
- Chile powder
- Garlic salt
- Sea salt
Instructions:
- Preheat the oven to 375°F
- In a bowl, combine rotisserie chicken, roasted corn, green chiles, and cilantro to create your street corn-inspired chicken mixture
- Lay corn tortillas on a baking sheet and warm them in the oven for 3-4 minutes. This helps prevent them from breaking when baking.
- Remove tortillas from the oven and top each one with shredded Monterey Jack cheese
- On one side of the tortilla, add the chicken mixture
- Fold over and press down
- Repeat with remaining tortillas and chicken
- Spray lightly with avocado oil spray and bake for 15 minutes
- Broil for 2-3 minutes to get them crispy
- Remove from the oven, top with cilantro and crumbled Cotija cheese
