Ingredients:
- 1/3 cup natural peanut butter
- 1/4 cup fresh raspberries, mashed
- 1/2 tsp honey or maple syrup (optional)
- 1/2 cup dark chocolate chips (70% cacao or higher)
- 1 tsp coconut oil
Instructions:
1. In a small bowl, mash the raspberries with a fork.
2. If using, add in honey/maple syrup.
3. Melt the chocolate chips and coconut oil together.
4. Fill muffin tin with parchment cups.
5. Spread a small amount of peanut butter mixture in the base of the cup.
6. Add a small spoonful of the raspberry mixture.
7. Pour the melted chocolate over the top to seal.
8. Sprinkle with flakey sea salt.
9. Place in the freezer for 20-30 minutes or until set.
10. Store in the fridge for a softer texture or the freezer for a firmer bite.
