Ingredients:
- Sweet potatoes
For miso tahini butter
- 4 tbsp dairy-free butter
- 1 tbsp white miso paste
- 2 tbsp tahini
- Zest of 1 lime
- Juice of 1/2 lime
- 1 tsp toasted sesame oil
For garnish
- Fresh cilantro
- Sesame seeds
- Flaky salt
Instructions:
- Scrub sweet potatoes, rub with olive oil, salt, and pepper, and wrap in parchment paper (no poking!)
- Roast at 400°F for 90 minutes until tender and custard-like inside.
- Slice, fluff, and top with miso tahini butter and garnishes.
