Ingredients:
- 1 packet active dry yeast (or 2.25 tsp)
- 1 cup warm water (use a thermometer to ensure the perfect temp!)
- 1 tsp coconut sugar or honey
- 2.5 cups flour
- 2 tbsp olive oil (plus extra for drizzling)
- 1 tsp flaky sea salt (plus extra for topping)
- Fresh rosemary
Instructions:
- Proof the yeast: Combine warm water and sugar or honey in a bowl, then add the yeast. Let it sit until foamy.
- Knead the dough: Gradually mix in flour, olive oil, and salt. Knead for 5 minutes using a stand mixer or by hand.
- First rise: Shape the dough into a ball, place it in a greased bowl, and cover with a damp towel. Let it rise in a warm spot for 45-60 minutes (or until doubled in size).
- Second rise: Flatten the dough into a ½-inch-thick rectangle or circle. Cover and let it rise for another 20 minutes.
- Prep the dough: Preheat the oven to 400°F. Transfer the dough to a parchment-lined sheet or pan. Poke deep dents into the dough with your fingers, drizzle with olive oil, and sprinkle with rosemary and sea salt.
- Bake: Bake for 20 minutes until golden. Drizzle with more olive oil if desired.
