Creamy Butternut Squash Pasta Sauce

This silky, flavorful sauce is perfect for cozy pasta nights and is easier than you think. Try this sauce recipe with any type or shape of pasta you prefer! It’s delicious no matter which way you serve it.

Ingredients:

  • 2 tbsp olive oil
  • ½ cup yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh sage, chopped
  • 2 lbs butternut squash, peeled & cubed
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ¼ tsp nutmeg
  • 1 cup vegetable stock
  • ¾ cup almond milk

Instructions:

  1. Sauté: Heat olive oil in a skillet. Cook onion until soft (3-5 mins), then add garlic and sage for 1 min.
  2. Cook: Add squash, season with salt, pepper, and nutmeg, and stir. Cook for 5 mins.
  3. Simmer: Pour in veggie stock, cover, and simmer on low until squash is tender (8-10 mins).
  4. Blend: Transfer everything to a blender, add almond milk, and blend until smooth.
  5. Serve: Toss with your favorite pasta, drizzle over veggies, or enjoy as a cozy soup!
