Wake up to a cozy fall breakfast with these delicious pumpkin chocolate overnight oats! Perfectly layered with creamy pumpkin, chocolate, and a crunchy magic shell, they’re an easy treat that’s ready to grab and go in the morning.
Ingredients:
Base
- 1/2 cup oats
- 1/3 cup almond milk
- 1 tsp flax seeds
- 1 tsp chia seeds
- 1 tbsp pumpkin puree
- 1 tsp cocoa powder
- 1 tsp pumpkin pie spice
- 1/2 tbsp sweetener (maple syrup)
- Opt: Splash of vanilla extract
Yogurt Layer
- 1 1/2 tbsp plain yogurt + 1/2 tbsp peanut butter
Magic Shell
- 10g melted dark chocolate
- 1 tsp coconut oil
Instructions:
- Base: In a bowl, mix all base ingredients. Pour into your serving jar.
- Yogurt Layer: In a separate bowl, combine yogurt and peanut butter. Spread over the oat base.
- Magic Shell: Melt dark chocolate and mix with coconut oil, then pour over the yogurt layer.
- Refrigerate for 1 hour or overnight, and enjoy a delicious, seasonal breakfast!
