This delicious Greek salad is a love letter from Greece! Made with handfuls of fresh vegetables and homemade sourdough croutons, it is truly to die for.
Let’s get chopping!
Ingredients:
- Tomatoes (cherry or small heirloom)
- Cucumber (Persian preferred)
- Feta
- Red onion or shallots
- Figs or nectarines
- Olives (Castelvetrano or Kalamata)
- Green bell pepper
- Fresh herbs: mint, oregano, parsley, chives, green onion, basil
- Dressing: EVOO, Dijon mustard, honey, lemon juice, red wine vinegar, garlic clove, salt, and pepper
- Croutons: sourdough, olive oil, + Italian seasoning
Instructions:
- Quarter the cucumbers, and cut all other vegetables into halves.
- Finely chop the herbs.
- Combine all veggies and herbs in a large bowl.
- Make the dressing by whisking together ingredients or shaking in a mason jar.
- For croutons, cut sourdough into 1-inch pieces and drizzle with olive oil & Italian seasoning.
- Bake for 10 minutes or until lightly golden at 400°F.
- Lastly, top the salad with croutons, drizzle dressing, crumble feta over, and enjoy!
