Craving a quick and light, healthy meal to make in a pinch? This one is a winner that you don’t want to miss out on. You only need a handful of ingredients to make this vegan masterpiece.

Ingredients:
- 1 can chickpeas (or freshly cooked)
- 1/4 cup red or green onion (scallions), finely chopped
- 1 celery stalk, finely chopped (optional for added texture)
- 3 tbsp extra virgin olive oil
- 2 tbsp chopped fresh parsley
- 2 tsp garlic powder
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper (optional for a spicy kick)
Instructions:
- Mash the chickpeas in a bowl with a fork until they’re flaked but still chunky
- Mix in the chopped onion and celery
- In a small bowl, whisk together the olive oil, garlic powder, sea salt, black pepper, and cayenne pepper.
- Pour the dressing over the chickpea mixture and stir until well combined
- Fold in the chopped parsley
- Chill in the fridge for at least 30 minutes to let the flavors meld
- Serve on a dish of your choice! We added the Chickpea Salad to lettuce wraps, but this versatile dish is also great for salads, sandwiches/melts, dip for crackers + veggies, or even pasta!
