Chickpea "Tuna" Salad

Craving a quick and light, healthy meal to make in a pinch? This one is a winner that you don’t want to miss out on. You only need a handful of ingredients to make this vegan masterpiece.

Let’s get mashing!

Ingredients:

  • 1 can chickpeas (or freshly cooked)
  • 1/4 cup red or green onion (scallions), finely chopped
  • 1 celery stalk, finely chopped (optional for added texture)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp chopped fresh parsley
  • 2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional for a spicy kick)

Instructions:

  1. Mash the chickpeas in a bowl with a fork until they’re flaked but still chunky
  2. Mix in the chopped onion and celery
  3. In a small bowl, whisk together the olive oil, garlic powder, sea salt, black pepper, and cayenne pepper.
  4. Pour the dressing over the chickpea mixture and stir until well combined
  5. Fold in the chopped parsley
  6. Chill in the fridge for at least 30 minutes to let the flavors meld
  7. Serve on a dish of your choice! We added the Chickpea Salad to lettuce wraps, but this versatile dish is also great for salads, sandwiches/melts, dip for crackers + veggies, or even pasta!
