Ingredients:
Salad
- 2 cups arugula
- 1 medium crisp apple, chopped
- 1 sweet potato, boiled and fork-tender, sliced
- 1 large beet, sliced
- 2 large carrots, chopped
- 1/4 red onion, thinly sliced
- 1/4 cup sliced almonds
- 1/4 cup dried cranberries
- 2 tbsp salted + roasted pumpkin seeds
- Salt and pepper, to taste
- Protein of your choice
Orange Balsamic Vinaigrette
- Juice of 1 large orange
- 1/2 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 shallot, sliced
- Salt & pepper
Instructions:
- Place the beets and sweet potato in a medium-sized pot and cover with water.
- Boil over high heat for 10-15 minutes until crisp and tender.
- Remove from heat and let cool.
- Chop the cooked beet, sweet potato, apple, and carrots.
- Combine all ingredients in a large bowl and season with salt and pepper.
- In a small bowl, whisk together the vinaigrette ingredients and pour over the salad before serving.
- Add a protein of your choice, toss it all together, and enjoy!
