Chopped Winter Salad + Orange Vinaigrette

Packed with essential nutrients, this winter salad is everything you need to nourish and comfort yourself this season! Topped with a delicious orange vinaigrette, it will have you feeling more refreshed than ever.

Ingredients:

Salad

  • 2 cups arugula
  • 1 medium crisp apple, chopped
  • 1 sweet potato, boiled and fork-tender, sliced
  • 1 large beet, sliced
  • 2 large carrots, chopped
  • 1/4 red onion, thinly sliced
  • 1/4 cup sliced almonds
  • 1/4 cup dried cranberries
  • 2 tbsp salted + roasted pumpkin seeds
  • Salt and pepper, to taste
  • Protein of your choice

Orange Balsamic Vinaigrette

  • Juice of 1 large orange
  • 1/2 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 shallot, sliced
  • Salt & pepper

Instructions:

  1. Place the beets and sweet potato in a medium-sized pot and cover with water.
  2. Boil over high heat for 10-15 minutes until crisp and tender.
  3. Remove from heat and let cool.
  4. Chop the cooked beet, sweet potato, apple, and carrots.
  5. Combine all ingredients in a large bowl and season with salt and pepper.
  6. In a small bowl, whisk together the vinaigrette ingredients and pour over the salad before serving.
  7. Add a protein of your choice, toss it all together, and enjoy!
