Ingredients:
- 4 ripe avocados
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1 cob of corn, cooked and cut off the cob
- 2-4 oz Cotija cheese, chopped
- Handful of fresh cilantro, chopped
- 2 limes
- 2 tbsp extra virgin olive oil
Instructions:
- Mash the avocados with the juice of 1 lime, season with salt and pepper, and set aside.
- In a medium bowl, combine the cherry tomatoes, red onion, corn, Cotija cheese, cilantro, juice of the second lime, and olive oil. Season with salt and pepper to taste.
- Spread the mashed avocado on a plate, layer the corn salsa on top, and dig in with your favorite veggies or chips.
