Got some pent-up stress? Take it out on these cucumbers! In this refreshing dish, a classic Chinese technique meets Mediterranean flair. The cucumbers soak up every bit of flavor and are paired with homemade tzatziki and a tangy Dijon mustard dressing for the ultimate fusion experience.
Time to smash some cucumbers!
Ingredients:
- 2 medium cucumbers
- Salt & pepper
- Olive oil
- 1 tbsp Dijon mustard
- Juice of 1 lemon
- 1 tsp maple syrup
- 1 ¼ cups dairy-free plain yogurt
- 1 garlic clove, peeled & grated
- 1 handful of fresh parsley, finely chopped
- 1 large handful of fresh dill
- 2 spring onions, sliced
Instructions:
- Trim the ends off the cucumbers, then gently smash them with a rolling pin until they soften and split, being careful not to overdo it.
- Tear the smacked cucumber into 1-inch pieces and place them in a colander over a bowl. Sprinkle with salt, mix, and let drain for 15 minutes.
- Whisk together 4 tablespoons of olive oil, Dijon mustard, juice from half the lemon, maple syrup, salt, and pepper. Set this dressing aside.
- In a large bowl, combine the yogurt, grated garlic, juice from the remaining lemon half, chopped parsley, and a pinch of salt. Chop most of the dill, reserving a few sprigs for garnish, and mix it into the yogurt. This is your tzatziki.
- To serve, spread the tzatziki on a large plate, arrange the smacked cucumber pieces on top, and garnish with sliced spring onions and reserved dill. Drizzle the dressing over everything, and enjoy!
