Celebrate peach season with this vibrant salad featuring juicy seared peaches and creamy burrata. Let’s dive in!
Ingredients:
- 4-6 ripe peaches (white and yellow)
- 3 cups fresh arugula
- ¼ cup chopped pistachios
- 1 bunch fresh basil (torn or chopped)
- Burrata
Honey dijon balsamic vinegar:
- 2 tbsp Dijon mustard
- 2 tbsp honey
- ¼ cup balsamic vinegar
- ⅓ cup extra virgin olive oil
- Salt & pepper
Instructions:
- Cut peaches in half and remove the pit.
- Preheat a large skillet or grill on medium-high heat.
- Drizzle peaches with olive oil and season with salt & pepper and sear until golden brown.
- Remove and let cool.
- Whisk together Dijon mustard, honey, balsamic vinegar, and olive oil in a small bowl.
- Season with salt and pepper, and set aside.
- On a large platter, layer arugula as the base, sprinkle with half the basil, and tear apart the burrata to add to the platter.
- Arrange the peaches, sprinkle with pistachios, and top with the remaining basil.
- Drizzle with the honey dijon balsamic vinegar and finish with a touch of sea salt.
