It’s time to put a twist on your taco night with these zesty, flavor-packed shrimp tacos topped with fresh mango salsa and crunchy red cabbage slaw!

Ingredients:
Shrimp:
- 1 lb large or jumbo shrimp, peeled, deveined, and tails removed
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- Salt and pepper
Mango Salsa:
- 1 large mango, peeled, seeded, and cubed
- ½ red onion, diced
- 1 bell pepper, chopped
- Juice of 1 lime
Red Cabbage Slaw:
- 2 cups thinly sliced cabbage
- 1 bunch scallions, chopped (white and green parts)
- 1 bunch cilantro, chopped
- 1 tsp apple cider vinegar
- 1 tbsp extra virgin olive oil
Instructions:
- Rinse and pat the shrimp dry. Toss them with 1/2 tbsp olive oil, paprika, garlic powder, onion powder, salt, and pepper. Let them marinate while you prep the salsa and slaw.
- For the mango salsa, Mix diced mango, red onion, bell pepper, and lime juice in a bowl. Season with salt. Set aside.
- For the red cabbage slaw: Combine cabbage, cilantro, scallions, apple cider vinegar, and olive oil in a medium bowl. Season with salt and pepper, mix well, and set aside.
- Heat a skillet over medium heat. Add 1 tbsp olive oil and sauté the seasoned shrimp until cooked through. Remove from heat.
- Assemble tacos using butter lettuce as the shell. Fill with shrimp, top with mango salsa, red cabbage slaw, and a slice of avocado if desired. Enjoy!
