Starting your day with nourishment is one of the best ways to set yourself up for success and this easy recipe is packed with vitamins, minerals, and clean protein to fuel your body!

Ingredients:
- 1 small pumpkin
- 2 tomatoes (seeded)
- 2 green onions
- 3 broccolini stalks
- 1 cup mushrooms
- 1 cup spinach
- 12 free-range eggs
- 1 tbsp almond milk (or milk of choice)
- (optional: 1/4 cup goat cheese or cheese of choice)
Instructions:
- Preheat oven to 180°C (350°F).
- Chop the pumpkin and toss with olive oil, salt, pepper, paprika, and turmeric. Roast for 30 minutes.
- Chop tomatoes, green onions, and broccolini.
- Sauté vegetables (except pumpkin & spinach) with salt & pepper until tender. Add spinach and wilt.
- Whisk eggs and almond milk together.
- Layer roasted pumpkin in a baking dish, add sautéed veggies, then pour egg mixture over.
- Bake for 15-20 minutes until golden. Cool, slice, and enjoy!
