This delicious recipe is the perfect combination of warm, cinnamon-spiced apples and creamy oats. A simple, healthy dessert that is dairy free, gluten-free, and full of flavor!
(Recipe for 4 servings)
Ingredients:
- 2 Fuji apples
- 2 tsp cinnamon
- 2 tbsp maple syrup
- 2 tbsp vegan butter
- 1.5 cup oats
- 2 cup almond milk (or milk of choice)
- 2 tsp cinnamon
- 2 tsp baking powder
- 2 tbsp golden flaxseed meal
- Optional: 2 tbsp chia seeds
Instructions:
- In a bowl, mix together oats, milk, flaxseed, baking powder, and cinnamon. Blend in a blender or food processor until smooth.
- Transfer the oat mixture to pan.
- Preheat oven to 350°F (175°C).
- Wash, peel, and cube the Fuji apples.
- In a non-stick pan over medium-low heat, melt maple syrup and vegan butter. Add apple cubes and cook for 5-6 minutes until golden brown.
- Spoon the caramelized apples over the oat mixture in ramekins.
- Bake for 20 minutes, until bubbly and golden.
- Optional: top with a scoop of dairy-free ice cream!
