Ingredients:
- 2 cups chopped romaine lettuce
- 1 cup chopped purple cabbage
- 1 cup shredded carrots
- Ā½ red onion, diced
- 1 cup edamame beans
- 1 bunch of cilantro, chopped
- Ā¼ cup chopped peanuts
- Ā¼ cup pepitas
Dressing:
- 2-inch knob of ginger, grated
- Ā¼ cup peanut butter
- 3 tbsp hot water
- 3 tbsp rice vinegar
- Zest and juice of 1 lime
- 3 tbsp coconut aminos
- 2 tbsp sesame oil
Instructions:
- In a small bowl, whisk together peanut butter, hot water, grated ginger, rice vinegar, lime zest and juice, coconut aminos, and sesame oil until smooth and creamy. Set aside.
- In a large salad bowl, combine romaine lettuce, purple cabbage, carrots, red onion, edamame beans, cilantro, chopped peanuts, and pepitas.
- Drizzle the dressing over the salad and toss until evenly coated.
