Crunchy Thai Peanut Salad
You don’t hate salads, you’re just making them wrong! Packed with vibrant veggies and topped with a creamy peanut dressing, this flavorful salad is far from boring. Here’s how to whip it up!

Ingredients:

  • 2 cups chopped romaine lettuce
  • 1 cup chopped purple cabbage
  • 1 cup shredded carrots
  • ½ red onion, diced
  • 1 cup edamame beans
  • 1 bunch of cilantro, chopped
  • ¼ cup chopped peanuts
  • ¼ cup pepitas

Dressing:

  • 2-inch knob of ginger, grated
  • ¼ cup peanut butter
  • 3 tbsp hot water
  • 3 tbsp rice vinegar
  • Zest and juice of 1 lime
  • 3 tbsp coconut aminos
  • 2 tbsp sesame oil

Instructions:

  1. In a small bowl, whisk together peanut butter, hot water, grated ginger, rice vinegar, lime zest and juice, coconut aminos, and sesame oil until smooth and creamy. Set aside.
  2. In a large salad bowl, combine romaine lettuce, purple cabbage, carrots, red onion, edamame beans, cilantro, chopped peanuts, and pepitas.
  3. Drizzle the dressing over the salad and toss until evenly coated.
  4. Serve and enjoy! ☺️
