Pancake Ingredients:
- 1 scoop of Plant Protein
- ½ cup of Almond Flour
- ½ cup of Tapioca Flour
- 2 tbsp of Coconut Flour
- 2 Eggs
- ⅔ cups of Almond or Coconut Milk
- 1 tsp of Apple Cider Vinegar
- 1 tbsp of Honey
- Pinch of Sea Salt
- Coconut Oil
- Berry Compote Ingredients:
- 6 oz of Fresh Organic Raspberries
- Juice of 1 Lemon
- 1 tbsp of Raw Cane Sugar or Organic Maple Syrup
Instructions:
- Mix all pancake ingredients in a large bowl and let sit for 15 minutes.
- Mash raspberries, lemon juice, zest, and sweetener for the compote.
- Heat a pan with coconut oil or butter and cook pancakes until golden brown.
- Serve pancakes with a layer of fresh raspberry lemon compote and additional berries.
