Berry-licious Power Pancakes

Surprise your loved ones with a breakfast that’s as delicious as it is nutritious! Featuring a blend of wholesome ingredients that’ll provide long-lasting energy, this is a fast and easy way to make every morning great. 

Pancake Ingredients:

  • 1 scoop of Plant Protein
  • ½ cup of Almond Flour
  • ½ cup of Tapioca Flour
  • 2 tbsp of Coconut Flour
  • 2 Eggs
  • ⅔ cups of Almond or Coconut Milk
  • 1 tsp of Apple Cider Vinegar
  • 1 tbsp of Honey
  • Pinch of Sea Salt
  • Coconut Oil
  • Berry Compote Ingredients:
  • 6 oz of Fresh Organic Raspberries
  • Juice of 1 Lemon
  • 1 tbsp of Raw Cane Sugar or Organic Maple Syrup

Instructions:

  1. Mix all pancake ingredients in a large bowl and let sit for 15 minutes.
  2. Mash raspberries, lemon juice, zest, and sweetener for the compote.
  3. Heat a pan with coconut oil or butter and cook pancakes until golden brown.
  4. Serve pancakes with a layer of fresh raspberry lemon compote and additional berries.
  5. Enjoy!🌷
